Spring Time Brunch

Welcome Spring!! Once March comes around and the weather starts to finally warm up a bit, I find it the perfect time to have family and friends over. Hosting brunch is one of my favorite ways to entertain my family and friends. Today I wanted to share a coffee cake recipe I came across and an egg bake that I made up the other day when I had a few of my girlfriends over!

Spinach, Sausage and Goat Cheese Egg Bake 

  • 8-10 eggs
  • 2 TBSP of milk
  • 1/4 cup of spinach, chopped
  • 1/2 cup of mild Italian sausage, cooked and chopped
  • 1/4 cup of goat cheese, crumbled
  • Salt and pepper to taste

Whisk eggs and milk together. Stir in spinach, sausage and cheese. You can always add more of whatever you’d like. If the mixture needs more thinning, add another splash of milk. Bake at 350ºF for about 30-45 minutes, or until a toothpick inserted in the middle comes out clean. It will depend on how thick your egg bake is.
